This is the chain&#8217;s research-and-development flagship, where new plates and cocktails debut before anywhere else in North America \u2014 order the experiment, tell the server what you think, and your verdict genuinely helps decide what tens of millions of guests eat next year.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"The_Concept\"><\/span>The Concept<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Earls is an Alberta-born family business that grew from its first mid-eighties location into one of Canada&#8217;s biggest premium-casual groups, with its creative headquarters now in Vancouver. The Test Kitchen, steps from the Vancouver Art Gallery, is where the Chefs&#8217; Collective \u2014 a rotating bench of the company&#8217;s top culinary talent \u2014 trials ideas on a live dining room.
