and Vancouver&#8217;s is Miku. When it introduced aburi \u2014 sushi kissed with open flame \u2014 the city never quite went back. Today the waterfront room near Canada Place pairs that signature torch-work with harbour views, a proper cocktail and sake list, and the low hum of a dining room that knows it&#8217;s somewhere important.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"The_Concept\"><\/span>The Concept<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Miku arrived in 2008 under Seigo Nakamura, the Japanese restaurateur behind Tora Corporation and, later, Yaletown&#8217;s Minami. His idea: take flame-seared pressed sushi, a technique with roots nearly a century deep in Japan, and translate it for the West Coast with original sauces built around non-traditional ingredients. In 2013 the restaurant moved into its current Coal Harbour waterfront home, and the Michelin Guide now lists it among the city&#8217;s recommended tables. Seafood is Ocean Wise; the wine program holds a Wine Spectator Award of Excellence.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"What_to_Order\"><\/span>What to Order<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>The salmon oshi is the icon: pressed BC salmon over vinegared rice, a dab of Miku sauce, a pass of flame, a whisper of jalape\u00f1o \u2014 two bites that explain the whole aburi phenomenon.
