Black+Blue stacks three storeys of steakhouse theatre in downtown Vancouver’s luxury district and crowns it with The Roof — the city’s largest rooftop dining destination, complete with blazing outdoor fireplaces and a glass perimeter that laughs at Vancouver drizzle. This is where a steak dinner becomes a night out.
The Concept
Part of the Glowbal Restaurant Group, Black+Blue is built around one genuinely rare asset: a Himalayan salt-lined aging locker, where walls of pink salt brick purify the air and coax moisture out of the beef over twenty-eight to forty-five days. The house is Kobe-certified — one of a select circle in Canada — and stocks Japanese A5 wagyu and Canadian Prime alongside its salt-aged cuts.
What to Order
The dry-aged steaks are the headline: deep, funky, tender in a way fresh beef can’t imitate. Push the boat out with A5 wagyu or certified Kobe; keep it classic with a Prime cut and the tableside Caesar salad, tossed with due ceremony. Seafood platters, oysters and lobster hold the line for the non-carnivores, the wine cellar runs deep and confident, and the cocktail list on The Roof is engineered for long evenings.
