Cardero’s doesn’t overlook the Coal Harbour marina — it’s practically moored in it. Built out over the water among the masts and yachts, the restaurant and its attached Marine Pub run on a rhythm the rest of the city envies: live music twice a day, wood smoke drifting from the oven, and a patio where the boats bob close enough to read their names.
The Concept
Part of the Sequoia Company of Restaurants — the local group behind some of Vancouver’s most scenic dining rooms — Cardero’s pairs unpretentious West Coast cooking with one of the city’s genuinely great settings. The formula splits neatly in two: a polished dining room for dinner proper, and the Marine Pub next door, where the same kitchen feeds a livelier crowd of locals, sailors and seawall wanderers with no reservation required.
What to Order
The cedar plank salmon is the calling card — slow-roasted over the plank until the smoke seeps in, as West Coast as dinner gets. The wood-fired oven also sends out crackling house pizzas, the Thai chili prawns have a loyal following, and the fresh sheet leans on whatever the boats and markets delivered. Sundays bring a slow-roasted prime rib with Yorkshire pudding; the pub side pours local craft beer to a soundtrack of live musicians.
The Space
Nautical timber, warm lamplight, a fireplace for grey afternoons and panoramic windows that put the marina, Stanley Park and the North Shore mountains on every table. The patio is summer’s prize; the pub keeps the energy up year-round, with live local talent in the afternoon and again at night.
