The Concept
Earls is an Alberta-born family business that grew from its first mid-eighties location into one of Canada’s biggest premium-casual groups, with its creative headquarters now in Vancouver. The Test Kitchen, steps from the Vancouver Art Gallery, is where the Chefs’ Collective — a rotating bench of the company’s top culinary talent — trials ideas on a live dining room. The menu shifts constantly, which is precisely the point.
What to Order
Whatever’s new, first — the trial dishes are flagged and change without warning; recent runs have surfaced the likes of a dynamite prawn and mango roll, Hunan kung pao, Sicilian calamari and tinga chicken tacos. Around the experiments sit the greatest hits that earned Earls its reputation: Leroy’s crispy dry ribs, Lois Lake steelhead salmon, proper burgers, pizzas, noodle bowls and a steak section that takes itself seriously. The bar runs the same R&D logic, so the cocktail list is never the same two visits running.
