Miku: The Sushi That Changed Vancouver
Every city has one restaurant that rewired how it eats, and Vancouver’s is Miku. When it introduced aburi — sushi kissed with open flame — the city never quite went back. Today the waterfront room near Canada Place pairs that signature torch-work with harbour views, a proper cocktail and sake list, and the low hum of a dining room that knows it’s somewhere important.
The Concept
Miku arrived in 2008 under Seigo Nakamura, the Japanese restaurateur behind Tora Corporation and, later, Yaletown’s Minami. His idea: take flame-seared pressed sushi, a technique with roots nearly a century deep in Japan, and translate it for the West Coast with original sauces built around non-traditional ingredients. In 2013 the restaurant moved into its current Coal Harbour waterfront home, and the Michelin Guide now lists it among the city’s recommended tables. Seafood is Ocean Wise; the wine program holds a Wine Spectator Award of Excellence.
What to Order
The salmon oshi is the icon: pressed BC salmon over vinegared rice, a dab of Miku sauce, a pass of flame, a whisper of jalapeño — two bites that explain the whole aburi phenomenon. Follow with ebi oshi, flame-licked sashimi, and the kitchen’s Japanese-West Coast mains; sommelier-guided pairings turn dinner into a session. Dessert belongs to the house pastry team — the green tea opera cake has a following of its own.
The Space
Sleek and confident: a long sushi bar in full view, a lounge and full bar for pre-dinner sake, a private dining room, and a waterfront patio where float planes and harbour traffic supply the entertainment. The room reads special-occasion without demanding a whisper.
Who It’s For
Sushi obsessives making a pilgrimage, date nights that want drama without stuffiness, cruise passengers starting their trip properly, and anyone chasing the definitive taste of modern Vancouver dining.
Good to Know
Do I need a reservation? Strongly advised — evenings and weekends book out well ahead.
What must a first-timer order? The salmon oshi — it’s the dish that made the restaurant, and the city’s, name.
Is there a good spot for drinks first? Yes — the lounge and bar pour sake, cocktails and an award-winning wine list.
Is the seafood sustainable? Ocean Wise standards guide the sourcing throughout.
Does it work for celebrations? Absolutely — a private dining room and waterfront tables handle occasions gracefully.
